If only we knew the POWER those chia seeds had for our diet back then. The Chia Pet uses the same “Chia Seeds” that are in the lime light today.
Chia Seeds have more Omega-3’s than salmon and is one of my favorite food to consume to help balance blood sugar. They make a great breakfast pudding alternative to cold cereal. Once you try it, you’ll feel more hydrated and alert.
When you soak chia seeds, they swell up 7 times their size and take on a tapioca-like texture which I love. Healthy flan, anyone? You’ll see them in beverages like Chia Star in the health food stores, which are helpful if you’re dehydrated.

Chia Gel Porridge
Ingredients
I Cup chia seeds
5 Cups flavored nut milk
1-2 Tsp pure, organic, raw vanilla powder, vanilla extract, or other flavoring for taste
Date paste (recipe below)
1 Tsp cinnamon (optional)
Date Paste Method
– Soak ½ pound of dates in water for 30 minutes
– Add 2 cups of water to the blender with soaked dates and blend until smooth.
– Store in refrigerator
Porridge Method
– Soak chia seeds in 5 cups of nut milk overnight. (The longer you soak them, the more liquid you will need.)
– Once chia seeds have absorbed all of the liquid and expanded, it will become gelatinous. (LOVE to add this chia gel to my smoothies to make them creamier!)
– Add cinnamon or your choice of flavoring
– Stir in date paste. Taste. Add more sweetener or blended fruit for desired sweetness.
– Serve with coconut, berries, or nuts.
